SDSU Research: Making Tenderness a More Common Trait in Beef

South Dakota State University assistant professor Amanda Weaver is conducting research in partnership with the University of Missouri that will help ensure every cut of beef available in grocery stores is tender. Her work uses a unique optical scattering device that “reads” muscle and will help beef producers bring a consistently tender cut of beef to consumer’s tables.
